Valpolicella Ripasso
Ripasso is made through a second, short fermentation of the
Valpolicella Classico on the grape marcs used for the production
of Amarone.
The wine is decanted several times undergoing a traditional
and natural clarification, then put to age in oak barrels for at
least 24 months.
Ripasso Clementi has a deep red color, rich
of complex scents of wild flowers and red fruits, a velvety bouquet
of cherries, plums, vanilla. It is perfect for risottos, meat
dishes, aged cheeses.
